Shauna'S Sunday Supper Soup(Meatball Soup)
- 1 1/2 lb. ground beef
- 1 egg, slightly beaten
- 3 Tbsp. water
- 1/2 c. bread crumbs
- 1/4 tsp. salt
- 1 Tbsp. celery, chopped
- 2 Tbsp. butter
- 2 c. water
- 1/4 c. chopped parsley
- 1/4 tsp. oregano
- 1 bay leaf
- 1 (10 1/2 oz.) can condensed beef broth (undiluted) or beef bouillon cubes
- 1 can tomatoes (undrained), chopped
- 1 envelope dry onion soup
- 1 c. carrots, sliced
- 1/4 c. celery tops
- 1/4 tsp. black pepper
- 1/4 tsp. basil
- Mix together beef, egg, water, bread crumbs, salt and celery. Shape into meatballs.
- Brown in butter and after browned, set aside.
- Add together all other ingredients and simmer 20 minutes. Add meatballs and simmer 20 minutes longer.
- Serve.
