Sea Bass Fillet With Bacon, Mushrooms And Cherry Tomatoes
- 4 None sea bass fillets, skin scored
- 1-2 tbsp lemon juice
- 4.5 oz smoked bacon, diced
- 3-4 tbsp canola oil
- 1 lb button mushrooms, sliced
- 1 None onion, finely diced
- 1 lb cherry tomatoes
- 4 tbsp all-purpose flour
- 2 1/2 cups arugula
- Drizzle fish fillets with lemon juice and season. Set aside.
- Heat a deep frying pan, add bacon and fry until crisp. Remove from pan and set aside. Add 1 tbsp oil, mushrooms and onion and season. Saute for 3-4 mins. Add tomatoes and bacon along with 5-6 tbsp water, bring to a boil then simmer for 1-2 mins.
- Meanwhile, dust fish fillets with flour and tap off excess. Heat 2-3 tbsp oil in a frying pan, add fish fillets skin-side down and sear for 2-3 mins. Turn and cook for another 30 seconds - 1 min. Fold arugula into bacon and vegetables then distribute between 4 plates. Place a fish fillet on each plate then serve.
