Surf And Turf Skewers With Potatoes And Spicy Salsa
- 1 2/3 lb large potatoes
- 4 tbsp olive oil
- 2/3 lb tomatoes, chopped
- 1 clove garlic, peeled and finely chopped
- 2 None red chilies, deseeded and finely diced
- 1/2 bunch fresh cilantro, leaves removed and finely chopped
- 1 tbsp honey
- 8 None raw king prawns, peeled and deveined
- 4 None chicken breasts (about 4 oz each), sliced in 1/2 lengthwise
- Cook potatoes in boiling salted water for about 20 mins. Drain, rinse under cold water, then cut into 1/3 inch slices. Season with salt and coat in oil.
- Meanwhile, make tomato salsa by mixing tomatoes with garlic, chili, cilantro and honey then season. Set aside.
- Broil potatoes for about 5 mins, turning. Thread prawns and chicken onto wooden skewers then add to pan with potatoes and broil, turning, for 10 mins. Serve skewers with potatoes and salsa on the side.
