Chicken And Zucchini Casserole
- 5 tbsp olive oil
- 1 lb (about 4 medium) zucchini, sliced
- 1/2 lb skinless chicken breast fillets, cut into strips
- 7 oz creamy goat cheese
- 4 sprigs fresh mint, leaves chopped
- 2 tbsp semolina (or all-purpose flour)
- 1/2 cup walnuts
- 1/2 cup fresh breadcrumbs
- Preheat the oven to 400u0b0F. Grease an ovenproof serving dish. Heat 1 tbsp oil in a frying pan and saute the zucchini for 3-4 mins. Remove and drain on paper towels. Add 2 tbsp oil to the pan, heat and saute the chicken until browned all over. Season with salt and black pepper and drain on paper towels.
- Transfer the zucchini and chicken to a bowl and stir in the cheese, mint and semolina. Season with salt and black pepper and spoon into the dish.
- For the topping, saute the walnuts in a dry pan until toasty. Allow to cool and chop roughly. Mix with the breadcrumbs and 2 tbsp oil and sprinkle over the casserole. Bake for 20 mins.
