Cannellini And Fava Bean Pasta

  1. Cook pasta in a large saucepan of boiling, salted water according to package directions. Drain well and return to pan. Keep warm.
  2. Meanwhile, heat oil in a large skillet on medium heat. Saute onion and garlic 3-4 mins, until tender.
  3. Stir in cannellini beans and stock. Reduce heat to low; simmer gently 3-4 mins. Add cream and return to simmer..
  4. Transfer to food processor with mint and lemon juice. Process until smooth. Season to taste.
  5. Add sauce, fava beans and 1/2 of the Parmesan cheese to hot pasta; toss to combine. Serve with remaining Parmesan cheese and additional mint leaves.
