Yalonchee Yaprakh(Lenten Dish; Spinach And Grape Leaves)
- 1 lb. onions
- 3/4 c. rice
- 1 bunch parsley, chopped
- 1 can tomato paste
- 1/2 tsp. pepper
- 1 (1 lb.) jar grape leaves
- 1 pkg. chopped frozen spinach
- 3/4 c. oil
- 2 cloves garlic
- 1/4 tsp. allspice
- 1/2 tsp. salt
- 3 lemons (juice)
- Saute minced onions and garlic in hot oil until slightly browned.
- Add rice, thawed spinach and parsley to onions and garlic.
- Saute for 3 minutes.
- Blend in tomato paste and spices. When cooled, roll rice mixture in grape leaves and arrange in layers in pot.
- Add lemon juice to 3 cups of water; add to grape leaves.
- Place a heavy plate on top of grape leaves.
- Bring to a boil; simmer for 45 minutes, or until rice is cooked.
- Drain water off.
- Serve hot or cold.
