Macadamia Nut And Papaya Cheesecake
- 4.5 oz graham crackers, crushed
- 1 1/4 cups ground macadamia nuts
- 1 tsp ground cinnamon
- 7 tbsp butter, melted
- None None For the Filling
- 1 1/2 lb cream cheese, chopped
- 1 cup brown sugar
- 3 None eggs
- 1 tsp vanilla extract
- 1 lb papaya, seeded, peeled, 1/2 chopped, 1/2 thinly sliced
- 3 tbsp all-purpose flour
- None None whipped cream, to serve
- None None toasted macadamia nuts, to serve
- Preheat oven to 350u0b0F. Line the base of a 9 inch springform pan with foil.
- In a large bowl, combine graham cracker crumbs, ground nuts and cinnamon. Mix in butter until well coated. Press into base and halfway up sides of pan. Chill for 20 mins, until firm.
- Meanwhile, for the filling, beat cream cheese and sugar until creamy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Fold in chopped papaya and flour. Transfer to prepared pan and bake for 45-50 mins. Let cool completely then decorate with remaining papaya. Serve with whipped cream and toasted macadamia nuts.
