Guinness Fruit Cake
- 3 cups mixed dried fruit
- 1/2 cup mixed glace cherries, quartered
- 3/4 cup glace orange slices, finely chopped, plus additional slices, to decorate
- 12 tbsp (1 1/2 sticks) butter, chopped
- 3/4 cup firmly packed dark brown sugar
- 1 1/2 cups Guinness or dark beer
- 3 None eggs, lightly beaten
- 1 1/4 cups flour
- 3/4 cup self-rising flour
- 1 tsp ground nutmeg
- 1/2 tsp ground ginger
- 2 tbsp apricot jam, warmed
- None None Powdered sugar, to dust
- Preheat the oven to 350u0b0F. Grease and line the bottom and sides of a deep 9-inch round cake pan with 3 layers of parchment paper, extending the paper 2 inches above rim.
- Combine the fruit, butter, sugar and Guinness in a large saucepan. Cook and stir for 4-5 mins or until the sugar dissolves. Bring to a boil; remove from the heat. Transfer to a large heatproof bowl and cool for 20 mins.
- Stir the eggs, sifted flours and spices into the fruit mixture. Spoon the mixture into the prepared pan and smooth the surface.
- Bake for 1 1/2 hours or until a skewer inserted at center comes out clean. Cover the pan tightly with foil and cool overnight.
- Serve the cake topped with additional orange slices. Brush with jam, then dust with powdered sugar.
