Tex-Mex Salad

  1. Mix ground beef, bread and egg. Add paprika and chili powder and season to taste. Form into meatballs. Heat oil in a frying pan and saute meatballs for about 3-4 mins until browned. Set aside to cool slightly.
  2. Heat marmalade in a saucepan then add ketchup and diced tomato. Add vinegar and hot sauce and season to taste. Toss with lettuce, onions, corn, beans and meatballs then distribute between serving plates. Serve garnished with tortilla chips.
