Mediterranean Lamb Pizza
- 1 pkg (16 oz) pizza dough
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 1 clove garlic, crushed
- 1 lb ground lamb
- 1/3 cup tomato paste
- 2 None plum tomatoes, diced
- 1/4 cup mint leaves, chopped, plus additional leaves for garnish
- 1 cup grated mozzarella cheese
- None None Greek yogurt, to serve
- Preheat the oven to 400u0b0F. Lightly grease a large baking sheet.
- Heat oil in a large skillet on medium heat. Saute onion and garlic 2-3 mins, until tender. Add ground lamb; cook 5 mins, until well browned, breaking up lumps with back of spoon as lamb cooks. Set aside.
- Roll dough into a 15 x 10 inch rectangle. Spread with tomato paste. Top with the lamb mixture, tomatoes and mint. Sprinkle with grated cheese.
- Bake 20-25 mins, until pizza crust is golden. Cut into squares. Sprinkle with additional mint leaves. Serve topped with yogurt.
