Aromatic Meatball Pilaf

  1. Heat 1 tbsp oil in a large frying pan over medium heat. Cook meatballs, turning, for 3-4 mins, or until browned. Remove from pan.
  2. Add remaining oil to pan. Cook onion, garlic and spices for 1-2 mins, or until fragrant. Add rice, stock, vegetables and meatballs. Simmer, uncovered, for 5-6 mins, or until stock is almost absorbed and meatballs are cooked through. Stir in cilantro. Serve with yogurt.
