Sausage And Tomato Stew

  1. Heat oil in a deep skillet on medium heat. Add sausages; cook and turn for 4-5 mins or until browned and cooked through. Transfer to a heatproof board. Cut into slices.
  2. Add onion, garlic, herbs and 1 tbsp water to the same pan on medium heat; cook and stir for 3 mins or until soft. Stir in tomato paste, fennel, tomato and 1 cup water. Bring to a boil. Reduce heat to low; simmer, stirring occasionally, for 10 mins or until vegetables are almost tender.
  3. Add sausage, cannellini beans and green beans to pan; simmer for 5 mins more or sauce has reduced. Serve with bread rolls.
