Banana Bread

  1. Preheat the oven to 350u0b0F. Grease an 8 x 4-inch loaf pan and line the bottom and long sides with parchment paper, extending the paper 2 inches over the sides.
  2. Combine the banana, sugar, eggs, butter, buttermilk and molasses in a large bowl. Stir in the combined sifted dry ingredients (do not overmix; the batter should be lumpy). Spoon the mixture into the prepared pan.
  3. Bake for about 1 hour until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
