Plum And Raspberry Cobbler
- 1 lb frozen raspberries
- 2 1/4 lbs plums, pits removed, halved
- 1/3 cup sugar
- 1/3 cup all-purpose flour
- 2 tbsp lemon juice
- 13-14 oz package scone mix
- 1/2 tsp ground cinnamon
- None None Confectioners' sugar, to dust
- None None Store-bought vanilla custard or pudding, to serve
- Preheat oven to 400u0b0F. Lightly grease a 6-cup ovenproof dish. Combine raspberries, plums, sugar, flour and lemon juice in a large bowl. Place mixture in prepared dish. Bake for 15 mins.
- Meanwhile, make scone dough following package directions, adding cinnamon to flour mixture. Bring dough together in bowl to form a ball. Turn out onto lightly floured work surface. Press dough out to 3/4-inch-thick disc. Using a 2-inch-round pastry cutter, cut dough into 15 rounds.
- Top raspberry mixture with scones. Bake for 20 mins or until scones are brown and fruit is bubbling. Remove from oven. Let cool for 5 mins. Dust with confectioners' sugar. Serve with custard.
