Quick Pork Fried Rice
- 1 tbsp honey
- 2 tbsp kecap manis (sweet soy sauce)
- 1 1/4 lb pork fillets, thinly sliced
- 2 tsp peanut oil
- 2 None large eggs, lightly beaten
- 1 None medium carrot, cut into matchsticks
- 1 None medium red pepper, seeded, thinly sliced
- 1 lb cooked white long-grain rice
- 8 None spring onions, thinly sliced
- 3 oz bean sprouts
- 2 tbsp soy sauce
- 2 tbsp char siu sauce
- Whisk together honey and kecap manis. Add pork and turn to coat.
- Heat 1 tsp oil in a wok. Pour eggs into wok. Cook over medium heat, tilting pan, until almost set. Remove omelette from wok and roll up tightly. Slice thinly.
- Add remaining oil to wok. Stir-fry pork, in batches, until cooked through. Set aside. Stir-fry carrots and sliced pepper until just tender. Return 1/2 the omelette to the wok along with rice, pork, onions, bean sprouts, soy sauce and char siu sauce. Stir-fry until hot. Remove from heat and sprinkle with remaining omelette.
