Seared Wasabi Salmon And Brown Rice Salad

  1. Cook rice according to package instructions. Let cool slightly.
  2. Meanwhile roll salmon in sesame seeds and wasabi powder until coated.
  3. Heat 2 tbsp oil in a large frying pan over high heat. Sear salmon for 1 min per side and still raw in the center. Let cool for 5 mins then cut into thin slices.
  4. Place brown rice in a large bowl along with salad greens, ginger, onions, chili and avocado. Gently toss to combine then arrange on a serving platter. Top with salmon. Whisk together soy sauce, lime juice and remaining oil then drizzle over salad and salmon. Serve with lime wedges.
