Seared Wasabi Salmon And Brown Rice Salad
- 18 oz brown basmati rice
- 12.5 oz sashimi-grade salmon
- 2 tbsp sesame seeds
- 1 tbsp wasabi powder
- 3 tbsp olive oil
- 3.5 oz baby Asian greens
- 2.5 oz pickled ginger
- 2 None spring onions, thinly sliced
- 1 None fresh long red chili, thinly sliced
- 1 None avocado, chopped
- 2 tbsp light soy sauce
- 2 tbsp lime juice
- 1 None lime, cut into wedges
- Cook rice according to package instructions. Let cool slightly.
- Meanwhile roll salmon in sesame seeds and wasabi powder until coated.
- Heat 2 tbsp oil in a large frying pan over high heat. Sear salmon for 1 min per side and still raw in the center. Let cool for 5 mins then cut into thin slices.
- Place brown rice in a large bowl along with salad greens, ginger, onions, chili and avocado. Gently toss to combine then arrange on a serving platter. Top with salmon. Whisk together soy sauce, lime juice and remaining oil then drizzle over salad and salmon. Serve with lime wedges.
