Mixed Seafood Noodles With Garlic Sauce
- 2 None large squid bodies, cleaned, scored, cut into 3/4 inch slices
- 12 None large raw prawns, peeled, deveined, tails intact
- 2 cloves garlic, minced
- 2 tbsp vegetable or peanut oil
- 1 None medium red onion, halved, cut into thin wedges
- 1 None medium red bell pepper, sliced
- 3.5 oz green beans, topped, cut in half diagonally
- 8.75 oz noodles, soaked in boiling water for 3 mins, or until soft, drained
- 2 tbsp soy sauce
- 3.5 oz baby spinach
- 1 tbsp sesame seeds, toasted
- Combine squid, prawns, garlic and 1 tbsp oil. Cover with plastic wrap and chill for 10 mins to marinate.
- Heat a wok or large frying pan over medium-high heat. Add remaining oil then stir-fry seafood, in batches, for 2-3 mins, or until cooked through. Set aside. Add onion, red pepper and green beans and cook for 2-3 mins. Return seafood to pan along with noodles, soy sauce and spinach. Toss until spinach wilts.
- Distribute between serving bowls. Sprinkle with sesame seeds. Serve immediately.
