Grilled Feta On Mediterranean Salad
- 4 pieces feta cheese (4 oz each)
- 1 tbsp olive oil
- 2 cloves garlic, finely chopped
- 2 tsp finely chopped fresh oregano
- 2 tsp finely chopped fresh marjoram
- 4 None thick slices sourdough bread
- 2 cups baby spinach leaves
- 3/4 cup pitted kalamata olives
- 2/3 cup sun-dried tomatoes in oil, drained
- 1 jar (6 oz) marinated quartered artichoke hearts, drained
- 1 jar (3 oz) capers, drained and rinsed
- 2 tbsp lemon juice
- Place each piece of feta on an 8-inch square piece of foil.
- Mix oil, garlic and herbs in a small bowl. Rub onto the feta. Wrap foil around the feta to enclose.
- Place the foil packets on a heated grill pan (or on the grill). Cook for about 5 mins, or until the cheese is heated through.
- Place the bread on the grill pan. Toast on both sides for about 1 min, or until golden.
- Meanwhile, place spinach, olives, tomato, artichokes, capers and lemon juice in a large bowl; toss gently to combine.
- Divide the salad among serving plates. Top with toast and feta.
