Mixed Berry Tarts
- 1 cup powdered sugar, plus extra to dust
- 1/4 cup all-purpose flour
- 1 1/4 cups ground almonds
- 2 tsp lemon zest
- 3/4 cup butter, lightly browned, cooled
- 5 None egg whites
- 2.5 oz frozen mixed berries
- 1/2 cup sliced almonds
- None None heavy cream, to serve
- Preheat oven to 400u0b0F. Lightly grease eight 2 1/2 inch loose-bottomed tart pans.
- Sift powdered sugar and flour together into a medium bowl. Add ground almonds, lemon zest and butter. Whisk egg whites until frothy then fold into dry ingredients until combined. Distribute between tart pans. Arrange berries over top and sprinkle with almonds. Bake for 10 mins. Reduce heat to 350u0b0F. Bake for another 8-10 mins, until golden.
- Serve warm, dusted with powdered sugar and heavy cream on the side.
