Cocktail Meatballs
- 2 lb. ground beef
- 1 c. cornflake crumbs
- 1/3 c. dried parsley flakes
- 2 eggs
- 2 Tbsp. soy sauce
- 1/4 tsp. pepper
- 1/2 tsp. garlic powder
- 1/3 c. ketchup
- 2 Tbsp. minced onion
- 1 lb. can jelled cranberry sauce
- 1 (12 oz.) chili sauce
- 2 Tbsp. firmly packed brown sugar
- 1 Tbsp. lemon juice
- Heat oven to 350u0b0.
- In large bowl, mix beef, cornflakes, parsley flakes, eggs, soy sauce, pepper, garlic powder, ketchup and onion.
- Make meatballs the size of walnuts.
- In another pan, combine cranberry sauce, chili sauce, brown sugar and lemon juice. Cook over moderate heat; stir occasionally until smooth and cranberry sauce is melted.
- Pour over meatballs in baking dish. Bake uncovered 30 minutes.
- Makes 60 meatballs.
