Nasi Goreng

  1. Heat 1 tbsp of the oil in a large skillet or wok on medium heat. Add half of egg and spread out to make a thin omelet. Cook for 1 min each side, until set. Repeat with remaining egg. Roll up together, then cut into thin strips. Set aside.
  2. Heat remaining oil in same pan. Stir-fry onion, garlic, chili pepper and shrimp paste for 3 mins. Add beef or pork and cook for another 3 mins, until brown. Stir in chicken and shrimp and cook for another 2-3 mins.
  3. Stir in rice and heat through. Add soy sauce and omelet strips and toss to combine. Serve with cucumber and onion.
