Halloumi, Grape And Pear Salad
- 2 None dried figs
- None None Olive oil, for frying
- 3 tbsp sliced almonds
- 1 tbsp extra virgin olive oil
- 1 tbsp raspberry vinegar
- 1 cup seedless green grapes, halved
- 1 None pear, peeled, cored and thinly sliced
- 1 tbsp lemon juice
- 1 tbsp butter
- 10 oz halloumi, sliced into 8 pieces
- 1 None small Romaine lettuce, torn into bite-sized pieces
- 1 tbsp snipped fresh chives
- 1 tbsp chopped mixed fresh tarragon, chervil and parsley
- 12 None small fresh mint leaves
- Soak figs in very hot water for 20 mins. Drain, squeeze out excess water, then cut into slivers, discarding stems.
- Heat a little olive oil in a small skillet on medium heat. Toast almonds for a few minutes until golden, stirring frequently. Transfer to a plate lined with paper towels; sprinkle with sea salt.
- For the dressing, whisk extra virgin olive oil, vinegar and 1/4 tsp salt in a bowl. Place the grapes and pear in a separate bowl with the lemon juice; toss gently.
- Melt butter in a medium skillet on medium heat. Add halloumi; brown on both sides. Transfer to a plate.
- Drain grapes and pears. Toss lettuce with the dressing in a large bowl. Add herbs, figs, grapes and pears; toss gently. Add halloumi; toss once more. Sprinkle with toasted almonds. Serve immediately.
