Ham And Arugula Pizza

  1. Sift 2 1/4 cups flour into a bowl and make a well in the center. Mix the yeast with 1/2 cup lukewarm water and set aside to bloom. Pour into the well. Gradually mix the flour into the yeast mixture until combined then knead until smooth. Cover and set aside in a warm place for about 15 mins to rise. Add a pinch of salt and 4 tbsp olive oil and knead again. Divide in 1/2, cover and set aside to rise for about 30 mins.
  2. For the sauce, heat 1 tbsp olive oil in a pan and saute the onions briefly. Add the tomato paste then the chopped tomatoes and garlic. Season and add the sugar and dried herbs. Simmer for 5-8 minutes.
  3. Preheat the oven to 425u0b0F. On a floured work surface, roll out the dough into 9 1/2 inch circles and place on 2 baking sheets covered with parchment paper. Spread the tomato sauce over top and drizzle each pizza with 1 tbsp olive oil.
  4. Bake the pizzas for 15-20 mins. Remove from the oven and top with the ham, mushrooms, tomatoes, arugula and parmesan shavings. Serve immediately.
