Cajun Style Meatloaf
- 2 lbs lamb chops, chopped
- 1 None small onion, chopped
- 2 None large eggs, lightly beaten
- 1 oz fresh soft breadcrumbs
- 1 clove garlic, crushed
- 2 tsp Cajun seasoning
- 1 None large potato, peeled, cut into 2 inch pieces
- 1/3 lb sweet potatoes, finely chopped
- 2 strips bacon, chopped
- 1 tbsp finely chopped fresh rosemary
- 1 tbsp vegetable oil
- None None mixed greens, to serve
- Preheat oven to 375u0b0F. Grease and line an 8 x 4 inch loaf pan with parchment paper, extending it a few inches above long sides.
- For the meat layer, process lamb and onion in a food processor until finely diced. Transfer to a large bowl. Add eggs, breadcrumbs, garlic and seasoning. Mix well. Spoon mixture into prepared pan and smooth the surface.
- For the potato layer, combine potato, sweet potato, bacon and rosemary in a medium bowl and press on top of meat layer. Drizzle with oil, cover with foil and bake 20 mins. Remove foil and bake 45-50 mins, until firm and cooked. Cool in pan 10 mins. Turn out onto a cutting board and slice. Serve with mixed greens.
