Marshmallow Coconut Bars
- 4 tbsp (1/2 stick) butter, chopped, at room temperature
- 1/3 cup sugar
- 1 None egg yolk
- 1/2 cup flour
- 2 tbsp self-rising flour
- 1/3 cup strawberry jam
- 9 oz pink and white marshmallows
- 1/4 cup flaked coconut
- Preheat the oven to 400u0b0F. Grease a foil-lined 11 x 7 inch baking pan, with foil extending at long sides for handles.
- Beat butter and sugar in a medium bowl with an electric mixer until pale and creamy. Beat in egg yolk. Fold in combined sifted flours. Press into prepared pan.
- Bake 10 mins. Spread jam on crust. Bake for a further 5 mins. Reduce oven temperature to 350u0b0F. Arrange marshmallows in alternate colors on jam. Return to oven for 8-10 mins, until soft. Remove from oven and sprinkle with coconut while hot. Cool in pan on a wire rack. Cut into bars to serve.
