Marshmallow Coconut Bars

  1. Preheat the oven to 400u0b0F. Grease a foil-lined 11 x 7 inch baking pan, with foil extending at long sides for handles.
  2. Beat butter and sugar in a medium bowl with an electric mixer until pale and creamy. Beat in egg yolk. Fold in combined sifted flours. Press into prepared pan.
  3. Bake 10 mins. Spread jam on crust. Bake for a further 5 mins. Reduce oven temperature to 350u0b0F. Arrange marshmallows in alternate colors on jam. Return to oven for 8-10 mins, until soft. Remove from oven and sprinkle with coconut while hot. Cool in pan on a wire rack. Cut into bars to serve.
