Banana Loaf With Walnut Butter
- 8 tbsp (1 stick) butter, at room temperature, chopped
- 2/3 cup firmly packed brown sugar
- 2 None eggs, lightly beaten
- 2 None very ripe bananas, mashed
- 3/4 cup sour cream
- 1 tbsp milk
- 2 cups self-rising flour
- 1 tsp baking soda
- None None FOR THE WALNUT BUTTER
- 8 tbsp (1 stick) butter, softened
- 2 tbsp maple syrup
- 1/2 cup walnuts, chopped
- Preheat the oven to 350u0b0F. Lightly grease and line a 9 x 5-inch loaf pan with parchment paper.
- Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition.
- Mix banana, sour cream and milk in a medium bowl. Fold in sifted combined flour and baking soda alternating with banana mixture in 2 batches. Spoon into prepared pan.
- Bake 55-60 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
- For the walnut butter, beat butter and maple syrup in medium bowl, until creamy. Stir in walnuts. Serve cake sliced, with walnut butter.
