Beef, Corn And Cilantro Fritters
- 1 cup self-rising flour, plus 2 tbsp
- 1 None large egg
- 3/4 cup buttermilk
- 7 oz beef rump roast, chopped
- 1 (7 oz) can sweet corn kernels, drained
- 1/4 cup chopped fresh cilantro leaves
- None None vegetable oil, to shallow-fry
- 1/2 cup sweet chili sauce
- 1/2 cup light sour cream
- None None mixed greens, to serve
- Sift flour into a large bowl then make a well in the center. Whisk together egg and buttermilk. Season. Pour into well and stir until combined and smooth. Add beef, corn and 2 tbsp cilantro. Stir until combined.
- Heat oil in a large heavy-bottomed frying pan to 350u0b0F. Spoon 1/4-cupfuls of beef mixture into pan. Cook, in batches, for 5 mins or until golden brown and cooked through. Using a slotted spoon, transfer to paper towels to drain. Cover to keep warm.
- Combine sweet chili sauce, sour cream and remaining cilantro in a bowl. Serve fritters with cilantro-chili sauce and salad.
