Beef, Corn And Cilantro Fritters

  1. Sift flour into a large bowl then make a well in the center. Whisk together egg and buttermilk. Season. Pour into well and stir until combined and smooth. Add beef, corn and 2 tbsp cilantro. Stir until combined.
  2. Heat oil in a large heavy-bottomed frying pan to 350u0b0F. Spoon 1/4-cupfuls of beef mixture into pan. Cook, in batches, for 5 mins or until golden brown and cooked through. Using a slotted spoon, transfer to paper towels to drain. Cover to keep warm.
  3. Combine sweet chili sauce, sour cream and remaining cilantro in a bowl. Serve fritters with cilantro-chili sauce and salad.
