Turkey And Ham Salad With Mango Dressing
- 1/3 cup honey, warmed
- 1/3 cup rice vinegar
- 1/3 cup peanut oil
- 2 tsp sesame oil
- None None Salad
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1 clove garlic, crushed
- 1 None small red chili pepper, deseeded, finely chopped
- 1/2 lb leftover turkey, sliced
- 1/2 lb leftover ham, sliced
- 4 oz baby spinach leaves
- 1 None small red onion, finely sliced
- 2 oz mixed Asian herbs, such as cilantro, mint and Thai basil
- 1 None large ripe mango, peeled, sliced
- None None toasted sesame seeds, for sprinkling
- For the marinade, mix together vinegar, sugar, garlic and chili pepper in a bowl. Stir until the sugar has dissolved. Place turkey and ham in a shallow bowl and pour in vinegar mixture. Set aside.
- For the dressing, whisk together honey, rice vinegar, peanut oil and sesame oil in a bowl.
- To assemble, toss together spinach, onion, herbs, drained meats and mango. Drizzle with dressing and sprinkle with sesame seeds to serve.
