Cranberry And Orange Scones
- 2 1/2 cups self-rising flour
- 2 tbsp cold butter, chopped
- 1/3 cup dried cranberries
- 2 tbsp sugar
- 1/3 cup sour cream
- 1/3 cup milk
- 1/3 up orange juice
- 1 None orange, peel finely grated
- None None Whipped cream, to serve
- Preheat the oven to 425u0b0F. Lightly grease a baking sheet. Sift flour into a large bowl. Add butter and rub in lightly, using fingertips. Stir in cranberries and sugar.
- Whisk sour cream, milk, orange juice and peel in a small bowl. Reserve 1 tbsp. Pour the remaining into the flour mixture. Mix to form a soft dough. Do not over-mix.
- Turn onto a lightly floured surface. Knead lightly. Roll to 3/4 inch thickness. Cut into rounds using a floured 3 inch round cookie cutter. Re-roll dough as needed. Place scones close together on prepared pan. Brush with reserved milk mixture.
- Bake for 12-15 mins, until scones sound hollow when tapped. Cool on a wire rack. Serve with whipped cream.
