Nacho Parcels
- 2 tbsp oil
- 1 lb ground beef
- 1 None red pepper, seeded and cut into cubes
- 1 None onion, peeled and finely diced
- 14 oz can chopped tomatoes
- 14 oz can black beans, drained and rinsed
- None None aluminum foil
- 2 None spring onions, finely sliced
- 1/4 lb Monterey Jack cheese, coarsely grated
- 1/4 lb tortilla chips
- Heat the oil in a large skillet and fry the beef for 5 mins, stirring often. Add the pepper and onion and fry for 2 mins. Stir in the tomatoes and beans and simmer for 3-4 mins. Season to taste.
- Meanwhile, fold 4 pieces of aluminum foil (12 x 6 inch) into squares. Put a quarter of the beef mixture in the center of each square, along with a quarter of the spring onions, cheese and chips. Close the foil to make parcels and heat under the broiler long enough to melt the cheese.
