Pork With Celeriac And Apple

  1. Heat 2 tbsp butter and 2 tsp oil in a large frying pan. Sear pork until browned all over. Add celeriac and cook, covered, for 10 mins, turning occasionally, until celeriac is tender.
  2. Meanwhile, heat remaining butter and oil in a medium frying pan. Cook onion, apples and mustard seeds, stirring, until onion is soft. Add stock. Cook, stirring, for 3 mins, or until apple is just tender. Remove from heat and stir in sage.
  3. Slice pork thickly and serve with celeriac and apple.
