Pork With Celeriac And Apple
- 4 tbsp butter
- 1 tbsp olive oil
- 1 1/2 lb pork tenderloin
- 1 lb celeriac, peeled, cut into thin wedges
- 1 None small white onion, thinly sliced
- 2 None large red apples, quartered, cored, thinly sliced
- 1 tsp whole yellow mustard seeds
- 1/2 cup chicken stock
- 1 tbsp fresh sage leaves
- Heat 2 tbsp butter and 2 tsp oil in a large frying pan. Sear pork until browned all over. Add celeriac and cook, covered, for 10 mins, turning occasionally, until celeriac is tender.
- Meanwhile, heat remaining butter and oil in a medium frying pan. Cook onion, apples and mustard seeds, stirring, until onion is soft. Add stock. Cook, stirring, for 3 mins, or until apple is just tender. Remove from heat and stir in sage.
- Slice pork thickly and serve with celeriac and apple.
