Armenian Che Kufta (Raw Lamb Patties)

  1. Lamb should be put through grinder three times.
  2. Mix in salt and pepper to taste, before adding bulgur and onions.
  3. Add salt to finely chopped green pepper, finely chopped green onions and finely chopped handful of parsley.
  4. Squeeze vegetables with hands to draw moisture and add to lamb.
  5. Also add cayenne pepper, if desired.
  6. Knead all together adding a little water until all ingredients stick together.
  7. Shape into patties and garnish with chopped parsley.
  8. Serve at once.
