Skewered Grilled Potatoes

  1. Place potatoes in water in a 2-quart casserole dish and cover. Microwave on High 12 to 15 minutes, stirring after 8 minutes. Drain.
  2. Mix remaining ingredients.
  3. Stir in potatoes.
  4. Cover. Refrigerate 1 hour.
  5. Drain, reserving salad mixture.
  6. Arrange potatoes on grill with tongs or on skewers over coals.
  7. Grill, covered, for 4 minutes.
  8. Rotate skewers or turn on grill.
  9. Brush with reserved salad dressing mixture.
  10. Continue grilling for 4 minutes.
  11. This recipe gets lots of rave reviews!
  12. Makes a great summer dish.
  13. Serves 6 to 8.
