Laura'S Southwest Tater Tot Hotdish
- 16 ounces of seasoned tater tots
- 16 ounces ground turkey
- 1 (10 3/4 ounce) can cream of chicken soup
- 1 (10 ounce) can green enchilada sauce (med hot)
- 1 (15 ounce) can black beans with jalapenos and lime juice
- 1 1/4 ounces fajita seasoning mix
- 1 cup shredded cheddar cheese
- Line a 8 x 8 pan with frozen tater tots and let them thaw completely for several hours.
- Cook the ground turkey in a separate pan and drain off fat.
- Add soup and fajita seasoning to the cooked turkey. Mix well & set aside.
- Pour the green enchilada sauce over the thawed tots.
- Pour black beans on top (as well as liquid in the can) and spread evenly.
- Add half of the shredded cheese on top of beans.
- Add turkey mixture. Top with the remaining cheese.
- Cover with tinfoil and bake in preheated oven of 350 degrees for 1 hour.
- Note: If you like a little crunch in your hotdish I break up some tortilla chips and mix in the finished product.
