Sausage Stuffed Baked Apples
- 8 baking apples (Pippin or Granny S.)
- 2 c. chopped onions
- 12 stalks celery, chopped
- 8 oz. sausage
- 1/2 c. raisins
- 1 (16 oz.) can apple juice concentrate (don't dilute)
- 1 Tbsp. chopped, fresh or canned ginger (optional)
- Preheat oven to 275u0b0.
- Core apples, leaving bottom intact to allow apple to hold filling.
- Enlarge hole with knife to make a space about 2-inches deep and 2-inches across.
- Saute onions, celery, chopped apple and sausage until meat is thoroughly cooked. Add raisins and 1/2 cup apple concentrate, bring to a boil.
- Cook over high heat until liquid thickens a bit (about 1 minute). Divide filling among apples and place in 8 x 8 x 2-inch or larger baking dish.
- Mix remaining concentrate with 1/2 cup water and pour in bottom of dish.
- Bake 1 to 1 1/2 hours, basting often.
- Serve warm.
- Good for brunch.
