Sausage Stuffed Baked Apples

  1. Preheat oven to 275u0b0.
  2. Core apples, leaving bottom intact to allow apple to hold filling.
  3. Enlarge hole with knife to make a space about 2-inches deep and 2-inches across.
  4. Saute onions, celery, chopped apple and sausage until meat is thoroughly cooked. Add raisins and 1/2 cup apple concentrate, bring to a boil.
  5. Cook over high heat until liquid thickens a bit (about 1 minute). Divide filling among apples and place in 8 x 8 x 2-inch or larger baking dish.
  6. Mix remaining concentrate with 1/2 cup water and pour in bottom of dish.
  7. Bake 1 to 1 1/2 hours, basting often.
  8. Serve warm.
  9. Good for brunch.
