Buttermilk Spice Cake
- 1 c. buttermilk (not sour milk)
- 2 Tbsp. hot tap water
- 1/2 c. diced, candied orange rind or 1 c. diced dates
- 1 c. raisins (optional)
- 2 c. unbleached flour (sifted before measuring)
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. freshly grated nutmeg
- 1/4 tsp. ground cloves
- 1/2 c. (1 stick) butter (not margarine)
- 1 1/4 c. packed brown sugar
- 2 large eggs
- Pour buttermilk and hot water over orange rind or dates and raisins if used; let stand while assembling other ingredients. Sift together flour, salt, baking soda and spices.
- Cream butter and sugar until light and fluffy; add eggs, one at a time, beating well after each addition.
- Add dry ingredients alternately with buttermilk mixture, beating until smooth after each addition.
- Turn batter into greased and lightly floured 9 x 9-inch pan.
- Bake in preheated 350u0b0 oven about 45 minutes or until a wooden pick inserted in center comes out clean.
- Cool slightly; while still warm, spoon Broiled-On Frosting on top.
- Place under broiler until frosting bubbles and browns lightly.
- Serves 6.
