Buttermilk Spice Cake

  1. Pour buttermilk and hot water over orange rind or dates and raisins if used; let stand while assembling other ingredients. Sift together flour, salt, baking soda and spices.
  2. Cream butter and sugar until light and fluffy; add eggs, one at a time, beating well after each addition.
  3. Add dry ingredients alternately with buttermilk mixture, beating until smooth after each addition.
  4. Turn batter into greased and lightly floured 9 x 9-inch pan.
  5. Bake in preheated 350u0b0 oven about 45 minutes or until a wooden pick inserted in center comes out clean.
  6. Cool slightly; while still warm, spoon Broiled-On Frosting on top.
  7. Place under broiler until frosting bubbles and browns lightly.
  8. Serves 6.
