Turkey And Eggplant Curry
- cooking spray
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 -2 fresh serrano chili, seeded and chopped
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1 small eggplant, cubed
- 1 cup turkey breast, cubed
- 2 carrots, chopped
- 1 bell pepper, chopped
- 2 cups chicken stock
- 1 tablespoon cilantro
- Heat a large pan and add cooking spray. Add onion, garlic, chilies. Cook for 2 minutes. Sprinkle in all spices and cook for additional 2 minutes.
- Add eggplant and turkey. Cook for 5 minutes, or until turkey is browned. Add carrots and red pepper, stir. Pour in the chicken stock.
- Bring to a boil, cover and simmer for 20-25 minutes, until turkey is tender.
- Sprinkle with chopped cilantro and serve.
