Raisin-Bread Stuffing
- 2 large onions
- 4 Tbsp. butter
- 2 juice oranges
- 1/4 tsp. ground allspice
- 1 tsp. salt
- 2 c. sliced celery
- 1 1/3 c. chopped walnuts
- 2 tsp. dried basil
- 1/4 tsp. pepper
- 12 c. dried cubed raisin bread
- In large saucepan, saute onions and celery in butter for 3 minutes.
- Stir in walnuts.
- Cook 2 minutes and set aside.
- Grate 4 teaspoons orange peel from oranges.
- Squeeze oranges to make 2 cups orange juice or add enough water to make 1 1/2 cups.
- Stir in orange peel, basil, allspice, pepper and salt to walnut mixture. Place bread crumbs in large bowl.
- Add juice and vegetable mixture. Toss to mix.
- Use 4 to 5 cups to stuff 8 to 10 pound turkey.
- Make balls (1/4 cupfuls) of remaining mixture.
- Bake in oven at 350u0b0 for 20 minutes.
- Use as appetizers.
