Raisin-Bread Stuffing

  1. In large saucepan, saute onions and celery in butter for 3 minutes.
  2. Stir in walnuts.
  3. Cook 2 minutes and set aside.
  4. Grate 4 teaspoons orange peel from oranges.
  5. Squeeze oranges to make 2 cups orange juice or add enough water to make 1 1/2 cups.
  6. Stir in orange peel, basil, allspice, pepper and salt to walnut mixture. Place bread crumbs in large bowl.
  7. Add juice and vegetable mixture. Toss to mix.
  8. Use 4 to 5 cups to stuff 8 to 10 pound turkey.
  9. Make balls (1/4 cupfuls) of remaining mixture.
  10. Bake in oven at 350u0b0 for 20 minutes.
  11. Use as appetizers.
