Lower Fat Cranberry Coffee Cake
- 1 c. sugar
- 1/2 c. margarine, softened
- 2 eggs
- 2 c. flour
- 1 tsp. baking powder
- 1 tsp. soda
- 1/2 tsp. salt
- 1 c. no fat sour cream
- 1 Tbsp. fresh squeezed orange juice
- 2 tsp. grated orange peel
- 1 (16 oz.) can whole cranberry sauce
- Preheat oven to 350u0b0.
- Grease and flour tube pan.
- Mix together flour, baking powder, soda and salt.
- Set aside.
- Cream sugar and margarine, add eggs and continue beating until well mixed.
- Add flour mixture alternately with sour cream, beat until well mixed.
- Stir in orange juice and peel by hand.
- Spoon 1/2 of batter into pan.
- Spread 1/2 of cranberry sauce on top of batter. Repeat layer of batter and cranberry sauce.
- Bake for 60 to 70 minutes.
- Cool 10 minutes before removing pan.
