Chunky Chicken Salsa Sandwiches
- 2 1/2 c. diced, cooked chicken
- 1 c. plain, nonfat yogurt
- 1/4 c. chunky salsa
- 1/2 tsp. ground cumin
- 1/2 c. chopped red/green pepper
- 1/3 c. fresh cilantro or parsley, chopped
- 1/3 c. chopped green onions
- 3 (6-inch) pita bread rounds, cut in half
- toppings: shredded lettuce, sliced ripe olives, chopped tomatoes and shredded Cheddar cheese
- In large bowl combine chicken, yogurt, salsa and cumin; stir gently.
- Stir in pepper, cilantro and green onions.
- Line pita half with lettuce.
- Spoon chicken salad mix evenly into pockets. Sprinkle toppings over chicken salad mix.
- Serve immediately. When using nonfat yogurt, drain excess liquid by placing yogurt in a coffee filter for 5 minutes.
