Hominy Stuffing
- 1 1/2 c. finely diced celery
- 1 large onion, diced fine
- 1/2 medium green pepper, chopped fine
- 1/4 c. butter
- 1 1/2 packets instant chicken broth mix (any dry instant soup mix may be substituted)
- 4 1/2 c. cooked hominy grits
- 3 slices whole wheat bread, cubed
- 1/2 c. chicken broth
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 3/4 tsp. poultry seasoning
- 1/8 tsp. white pepper
- In heavy skillet, melt butter.
- Add celery, onion, green pepper and broth mix; stir and cook until onion is transparent. Transfer to a greased 2 1/2-quart casserole.
- Add remaining ingredients; stir.
- Bake at 450u0b0 for 30 minutes or until top is golden.
- Makes 6 servings.
