Sugarless Applesauce Cake
- 1 c. raisins
- 1 c. dried fruit, diced
- 2 c. water
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 eggs, beaten
- 1 c. unsweetened applesauce
- 2 Tbsp. liquid sweetener
- 3/4 c. vegetable oil
- 1 tsp. vanilla
- Preheat oven to 350u0b0.
- Combine raisins, fruit and water in saucepan.
- Cook, uncovered, until water is evaporated and fruit is soft.
- Set aside to cool.
- In a large mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon.
- In a separate bowl, combine eggs, applesauce, sweetener, oil and vanilla.
- Add nuts to fruit mixture.
- Stir into dry ingredients and blend thoroughly. Pour into greased fluted tube pan.
- Bake 35 to 40 minutes or until cake tests done.
