Spinach Provencial
- 2 lb. fresh spinach or 2 pkg. frozen
- 1 large onion, chopped
- 1 clove garlic, minced
- olive oil
- butter
- 2 eggs, beaten
- 1 c. Parmesan cheese
- salt and pepper to taste
- Wash the spinach carefully or defrost thoroughly.
- In large kettle, heat olive oil and saute onion and garlic for a few minutes until onion is transparent.
- Add spinach.
- Cover tightly for 2 to 3 minutes, then stir into onion.
- Grease medium sized baking dish with butter.
- When spinach has cooled slightly, stir in 2 beaten eggs and 1/2 cup Parmesan cheese.
- Season with salt and pepper and pour into baking dish.
- Sprinkle with remaining cheese over the top and dot with butter.
- Bake at 375u0b0 for 10 to 15 minutes.
- We serve this with rice on the side.
