Mexican Casserole
- 1 lb. ground beef
- 1 onion, chopped
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 (16 oz. can tomatoes with juice
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 1 (8 oz.) can tomato sauce
- 1 (16 oz.) can hot chili beans, drained
- 1/2 tsp. dried marjoram
- 1 bay leaf
- 1/2 lb. sharp Cheddar cheese
- corn chips
- 1 bell pepper, diced
- In a 10-inch skillet, saute beef and onion.
- Add salt, pepper, bell pepper, seasoning mix, tomatoes, tomato sauce, beans, marjoram and bay leaf.
- Let simmer for 30 minutes.
- Remove bay leaf and pour into a 2-quart casserole.
- Preheat oven to 350u0b0. Sprinkle cheese over top.
- Top with corn chips.
- Bake for 20 minutes.
