Crab Artichoke Casserole
- 6 slices bread, cubed, remove crusts
- 1 1/2 c. mayonnaise
- 1 1/3 c. half and half
- 1 lb. crab meat or cleaned, cooked shrimp
- 1 (4 oz.) can sliced mushrooms, drained
- 1 (2 oz.) jar diced pimento
- 6 artichokes, quartered
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 1/4 c. chopped onion
- 1/2 c. soft bread crumbs
- 2 Tbsp. oleo, melted
- Combine mayonnaise and half and half until smooth and add cubed bread.
- Fold next 7 ingredients into this mixture.
- Pour into a slightly greased, shallow two-quart casserole.
- Cover and chill overnight.
- Combine soft bread crumbs and oleo.
- Stir and sprinkle over top of casserole.
- Bake one hour at 325u0b0 or until bubbly. Yields 8 servings.
