Chimichangas
- 1 dozen frozen flour tortillas
- 1 c. tomato sauce
- 1 c. cooked sausage or ground beef
- 1/4 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/4 tsp. cocoa (don't omit)
- 1/4 tsp. cumin powder
- pinch of sugar
- salt to taste
- vegetable oil for frying
- 1 small onion, chopped
- Allow tortillas to thaw while preparing the filling.
- In a saucepan, combine tomato sauce, cooked meat, onion, chili powder, garlic powder, cocoa, cumin, sugar and salt.
- Bring to a boil, cover and reduce heat to simmer 10 minutes.
- Allow filling to cool.
- Lay tortilla on a clean surface and divide the filling evenly in the center of each tortilla.
- Fold each tortilla like an envelope and secure with a toothpick.
- Deep fry on medium heat until golden brown.
- Drain on paper towel and keep warm, uncovered, on a warming tray or in low oven until ready to serve.
