Chicken Mini-Drumsticks
- 36 chicken wings
- 1 c. pineapple juice
- 1 c. beer
- 1/2 c. soy sauce
- 1/4 c. light brown sugar, packed
- 2 Tbsp. minced onion
- 1 tsp. ground ginger
- 1 clove garlic, crushed
- 1/4 c. margarine
- Remove tips from chicken wings.
- Combine pineapple juice, beer, soy sauce, brown sugar, onion, ginger and garlic.
- Stir together until sugar is dissolved.
- Add chicken, stirring to coat well.
- Cover and marinate at room temperature for about 1 hour. Drain chicken; reserve marinade.
- Melt margarine in a large frying pan over medium heat.
- Add chicken and cook, browning on all sides.
- add 1/2 cup reserved marinade to chicken.
- Cover and simmer, stirring occasionally, over low heat for about 15 minutes or until fork can be inserted into chicken with ease.
- Keep chicken moist by using additional marinade as needed.
