Cherry And Whipped Cream Salad
- 2 packets Knox unflavored gelatine
- 1/2 c. cold water
- 20 oz. can crushed pineapple, drained
- 3/4 c. sugar
- 1/4 tsp. salt
- 2 Tbsp. ReaLemon juice
- 1 tsp. vanilla
- 1/2 c. maraschino cherries, cut up
- 1 c. (1/2 pt.) whipping cream, whipped
- Soften gelatine in cold water.
- Drain pineapple (set aside). Add enough water to pineapple juice to make 1 1/2 cups.
- Heat this (pineapple juice and water) almost to boil; add gradually to gelatine.
- Stir until dissolved.
- Stir in sugar, lemon juice, salt and vanilla.
- Pour into mixing bowl.
- Chill until slightly thick. Beat with mixer until light and fluffy.
- Fold in drained pineapple, cherries and whipped whipping cream.
- Refrigerate.
- Best when made day prior to serving.
- (Pretty for Christmas using mixture of red and green maraschino cherries).
- Use cherry slices on top.
