Ms. Grace'S Peanut Brittle
- 2 cups raw peanuts
- 2 cups white sugar
- 1 cup white karo
- 1/2 cup water
- 1 inch cube butter
- 2 tsp. vanilla
- 2 tsp. soda
- pinch of salt
- buttered sheet of aluminum foil (18 x 18-inch)
- candy thermometer
- Place peanuts, sugar, karo, water, butter and pinch of salt into heavy saucepan. Put pan on stove over high heat and bring to boil, stirring continuously. Stirring continuously, boil vigorously for about 13 minutes or until mixture reaches hard crack on candy thermometer.
- Remove from heat immediately.
- Add vanilla and soda, stir to mix thoroughly and quickly pour onto buttered aluminum foil.
- Tease with forks to spread to desired thickness and allow to cool (about 1 hour). Break into pieces approximately 1x2 inches in size.
