Roasted Red Skin Potatoes With Sausage And Cheese #Sp5

  1. Preheat oven to 350 degrees.
  2. In a large bowl combine potato wedges and 2 tbsp olive oil, toss to coat.
  3. Place potatoes on a large sheet pan.
  4. Bake for 20 minutes, turning each wedge over after 10 minutes.
  5. Heat a large skillet over medium high heat.
  6. Add 2 tbsp olive oil to coat bottom of skillet.
  7. Add sausage slices.
  8. Cook on each side for 5 minutes.
  9. Drain on paper towels.
  10. Remove potatoes from oven and place on serving dishes.
  11. Top with grated cheese and scallions.
